To define tax rates, go to Settings > Tax rates. To create a tax rate tap 
Add and give the tax rate a name and percentage then tap 
Save.
The number next to the rate is the number of products assigned to it.
You can edit an existing tax rate by clicking into it.
Tax rates can then be specified from the Details tab when adding/editing a product.
Or from column I of the product export.
